Oregon crawdads (crawfish, crayfish, mudbugs, whatever you call them) are bigger and sweeter
than the more common Louisiana crawfish? Our crawdads are approximately 6” on average
compared to those bayou 4” Red Swamp crawfish and our crawdads have some big ole
delicious claw meat too! Oregon is also the second-largest commercial producer of crawfish.
